Happy Cinco De Mayo

Happy Cinco De Mayo! Hope yall had a wonderful day! Did yall do anything to celebrate, and if so, what did you do? It is not part of our heritage, but we did make some spanish food. For dinner tonight, we had tacos, and beans, and homemade salsa. Lil E even helped make the salsa. I let her help push the button on the blender today! She was so so proud of that!



Cat's Salsa
1 lg (28 oz.) can of whole tomatoes
3 - 5 Jalapenos
1 TBSP minced Garlic
1/4 c. Cilantro (fresh)
3 - 5 green onions
1/4 - 1/2 tsp salt
Blend to the thickness you like! (I like mine very liquidfied) You can add more or less of something if you do not like an item as much! But we love it! It's really yummy! We wash the jalapeno and put it all, minus the stem, in the blender, as we desire more fire in our salsa. If not you can clean them out before you place in blender!

We didn't do anything for Cinco de Mayo, but yesterday I did make a batch of homemade salsa from our garden bounty. So I guess you could say we celebrated a day early. *grin*
