Pinned it, Made it Monday

 

 

I haven’t participated in sometime. And I thought it was fitting and a great way to help me get back into some more regular blogging.

 

So last week while baby sitting, and taking all the kiddos to the VBS (at the friend’s Church), I needed some easy dinners. So I decided to do this cheeseburger sliders.

They were pretty good, but I have to say I prefer a grilled on the grill burger.

Pinned It, Made It Monday

The original pinned recipe
 
Chicken and Cream Cheese Taquitos
 

3 cups cooked shredded chicken (I like rotisserie)

6 ounces cream cheese, softened

1/3 cup sour cream

1/2 cup salsa

1 + 1/2 cups shredded sharp cheddar cheese

1 + 1/2 cups chopped baby spinach, stems removed

coarse salt and fresh black pepper, to taste

9 - 10 (6-inch) flour tortillas

vegetable or canola oil, for frying

 

Instructions:

  1. In a large bowl mix together the chicken, cream cheese, sour cream, salsa, cheddar and spinach. Season to taste with salt and pepper.
  2. Working with one tortilla at a time spread 2 heaping tablespoons of the chicken mixture off center and spread out like a log. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled.
  3. Add enough oil to a large skillet to generously cover the bottom. Heat on medium heat, cook tortillas in batches, until golden brown on each side. Remove to paper towels to drain.
  4. Serve with your choice of dunking sauce.
 
 
I didn’t fry ours. I baked them at 350. I also used larger tortillas, so they were larger. But I just used what was on hand.  And I omitted the spinach, as it was a last minute deal. And didn’t have any. Also instead of regular sour cream, I stirred in some that I had mixed with a packet of fiesta ranch dry mix.
 
 
 
 
They turned out great! I will next time add in the spinach. But I really liked the flavor with the fiesta ranch mixed with the sour cream.

Pinned It, Made It Monday




Have you seen all the rave on Pinterest about the Sharpie Plates? Well he is one that I pinned......


What you do, is decorate the plate with sharpies. Then bake at 350 for 30 minutes................

So I had to try my hand at it....
I did these cups, after I did my first plate... These are mine and hubby's cups for our upcoming anniversary! Just something cute for us.




Then I did this plate with a recipe for a sweet and special friend....... She saw it today and was totally in love!!!




I also saw on pinterest the washer necklaces, they were layered with 2 washers and wrote on with a Sharpie, then baked, like the plates. I did a few up. But I added some beads, and only did one washer.

My hubby is from where White Castles are the things. I never have had one and sure never made them. But I found this recipe and knew it was the way to go. Crescent rolls and said to taste like a white castle. So I made them for him, and he was so surprised and loved them! Even posted on his face book “my sweet Southern wife made the best white castles ever! They may not look just like, but they taste it” aww how sweet!

Crescent Burgers

1/2 lb of ground beef

Worcestershire sauce

1 egg

1/3 packet of dry onion soup mix

1/2 tsp of black pepper

2/3 cup of cheddar cheese

1 roll of crescents

 

Instructions

In a skillet cook the meat and drain any fat/ grease from the meat. In a medium bowl mix together 1/2 cup of cheese, onion soup mix, couple of drops worcestershire sauce, pepper, and then the meat. Unroll the crescents. Place a rounded tablespoon of the mixture at the larger end. Roll them up into little bundles. Place crescents onto a lined, with parch paper, baking sheet. Brush tops with egg wash. (simple break egg into a bowl and whisk with 1TBS of water.) Sprinkle with remaining cheese. Bake for 10 to 15 minutes.

 

They are yummy! And everyone loved them.  Hope yall enjoy them too!

Yummy Pinned and Made It Recipe

I pinned this recipe. (sorry I am not linking directly to me on pinterest at this point.)

 

I made this recipe.. The only things I did different were cook my chicken in the marinate in the skillet on the stove, and I used the Grill Mates Marinate I did half a package of the mesquite and a full package of the southwestern.  Oh and the cheese sauce for the top, I had left over rotel cheese dip, so I used it instead of a any sauce you would buy. But it says cheese sauce of choice. So I didn’t really change that. Because that is what I had on hand at the last minute. Btw we love the Grill Mates Marinate packages. I use them all the time.

I will say it was really yummy! Everyone did like it, except we did manage to get it a little spicy. I am sure the homemade cheese dip helped create that. It is something will will for sure make again!
