Scrapbooking kind of Day

I actually have done a lil scrapbooking today. I can't believe it, I completed 2 lay outs, 4 pages! Maybe I'm back on the roll. I love to scrapbook, just don't do it much anymore.


Hubby was working today, so my friend and I took the girls for an ice cream. They enjoyed it. We just had a relaxing day here at home. Made tacos and nachos for dinner. They were yummy! Hope everyone had a nice Saturday!

A Small Project

I had made these 2 pages with 2 of my favorite recipes (Peanut Brittle and Peacn Pie Bars) for a scrapbook recipe swap I am in. I am excited about the others that I will receive back. I did this type of project a couple years ago and I loved it! I love that lil cookbook. It is so special!


We were to do 6 x 6 pages. So here is a photo of each of the ones I did.

Working on my Resolutions

It has been busy for sure! I am working on getting back into a regular routine of scrapbooking. I worked on some tags for a swap this weekend. Here's a couple of them ......



I also made a resolution to try more new recipes and today was a huge success ~ The recipe I tried was a big hit here and with some good friends of ours. It is from the Gooseberry Patch Speedy Supers Cookbook.
Here it is ~





Chicken Ranch Jack

2 to 3 T butter
3 boneless skinless chicken breast cut into strips
¼ c. ranch salad dressing
6 slices of bacon, crisply cooked and crumbled
1/3 c. shredded Monterey jack cheese


Melt butter in a large skillet over medium heat; saute’ chicken until cooked through. Remove from skitllet. Arrange chicken in a lightly greased 2- quart casserole dish. Pour ranch dressings over chicken; stir well. Sprinkle with bacon and cheese; broil until cheese is melted and golden.

I increased the cheese, because we love cheese. I had double the recipe and so I ended up using 2 cups total. So a cup of cheese instead of 1/3 cup of cheese. Plus I am going to use half pepper jack cheese next time.
