Today I am going to share a simple recipe, but an all time favorite! It’s hubby’s favorite for sure.
Blueberry Muffins
2/3 c. shortening
1 c. sugar
3 eggs
3 c. self rising flour
1 c. milk
1 c. blueberries
Cream shortening, gradually add sugar, beating until light and fluffy. Add eggs 1 at a time, beating well after each. Add flour alternating with milk. Beginning and ending with flour. Gently stir in berries. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 375 for 20 to 25 minutes. Makes 2 dozen. Can also springle top with sugar before baking for an added bakery touch.
Hugs and Blessings,

My family LOVES berry muffins! Lately I've been making a blueberry/strawberry mix.
