Mexican Cornbread

2 boxes of Jiffy Cornbread Mix

8 oz sour cream

2 beaten eggs

1 can creamed corn

1 stick of butter, melted

1 1/2 c. grated cheese (cheddar or cheddar mix)

1/4 – 1/2 c. chopped jalapenos (canned or pickled)

Grease 9 x 13 pan. Mix eggs, corn, sour cream, butter, and jalapenos together. Add in cornbread mix. Stir in cheese. (Sometimes I had a little bit of mexican spice too, like homemade taco seasoning.) Pour into pan. Bake at 350 for about 40 to 45 minutes.

Hope you and yours enjoy!

Hugs and Blessings,
