Zippity Zippin on by.....

First off, Happy Fall Yall! I am so very happy that it is officially fall! My favorite time of the year starts now!

Where has the time gone? I can't believe how fast this month has zipped by! It is like yesterday was Labor Day weekend. Here's a post that I started that weekend and realized last week, I had not published it. It is here! Then when I did, it kept the original created date and was lost down in the shuffle of things.


You may be asking, just what have they been up to over there... Well I'll try to take this time to catch you all up! So be warned, it will be a long post here. So far this month we have been busy, on the go, with lots of new things! As well as a few of us, have been sick and under the weather! But we are getting better.





We had been at the park playing. It was before Labor Day weekend, and the girls were having a blast! We went on a lil walk, and Lil E found herself a catapillar! She loves 'em. Just see below how gentle she was being, and how much love she was giving that lil fella! She would let it crawl all up her arm, and was so sweet to show it to little sisssy!











I just love this pic of Lil K on the bridge, while we were walking! She was busy looking for some fish and at the ducks below us.



I know we posted a first day of PreSchool post for yall, but there is a picture of the girls together that day! I still can't say enough good about the awesome preschool! It is trully wonderful! The girls love each other so much! Just look at how much they look alike! :)


And I posted a Birthday post too, but here is a picture of the Birthday girl blowing out her candles! She picked out what kind of cake she had. It was a yellow cake with chocolate icing!



Lil E was a flower girl in a friends wedding. It was her birthday weekend, so we were way busy with that. We actually had a nice relaxing day and all, before getting ready for the big event! We had lots of rain that day! It had been planned as an outside wedding, but was moved inside because of the weather.


None of us believed Lil E would walk down the isle, but she did! And she was making sure everyone was watching her! And this is even without any practice at all! I was proud!

Rest assured, Lil K stole the show! When it was time to dance, she was busy as could be! She would dance and dance and prance around! Everyone thought she was the cutest thing! It was just darling!!! Even the older people couldn't get over her out there strutting her stuff!





We sure did have a busy weekend! But then it was time to get things ready for the new week! Because on Monday we had something special going on! Could it have been Lil E's birthday and Star Attraction at school! She picked out cars for her cupcakes to take to school. And we passed out fruit snacks to share with her friends as the take home snack.






We were going over all the things about Lil E! What she likes to do, about her family, what books are her favorites, and what she wants to be when she grows up. Can you guess what she said? Oh that girl is a mess! The only thing she wants to do is, drive a race car, like her friend Jennifer. (yes our friend Jennifer, drives a race car.)



Wow, last week was busy! The next day was another really big day for us! We started Dance classes! All that is offered in our area, is tap. But that is ok! Lil E was eager to learn and had fun! But this class was a bit over her head, so we will be changing her class.


Then we had a great fun day last Thursday! We were super busy at the park! We played at the park with our friends for a couple of hours! They ran and played and laughed! And Mommies were able to enjoy some mommy talks too! And of course, we joined the kiddos for some play time too.




After we were done playing at the park, it was off to feed the ducks! We love to go feed the ducks. Although you gotta watch closely, because my girls love the water, and they will try to sneak in there. So mommy is way busy while feeding.


Then it was time for lunch! We all went to DQ and enjoyed lunch the kiddos all had ice cream! YUMMY!

Then after a few errands, we met up at the library! It was really nice! But I had a real hard time getting my girls to whisper! They are on the louder side, like their momma! Man I gotta work on that. LOL





What a great day we had! We spent some time there, and checked out several books to bring home and read. One of our favorites that we brought home was, Racecar Driver's Night Before Christmas, by Una Bella Townsend.

Glad we had some books to enjoy! But it was time for being home! Mommy and Lil K came down and were feeling bad. So we spent several days at home and taking it way easy! Thank God for Daddy, because he helped Mom out bunches! He kept the girlsy busy and he did things around the house too! He was such a help. I spent most of the weekend in bed. Sunday I layed on the couch and watched Football and Nascar, when I wasn't sleeping.

If you haven't, last friday, I posted a link to Kellys Korner, you should check it out! Not only is her blog awesome, but Friday was a show us your life, and it was your favorite recipe! There are bunches over there! And I found a wonderful fried chicken recipe! It was by far the best recipe for fried chicken, that I have ever had!

Whew, there you have it. Just what we have been up! I'm still in shock about just how fast this month is zipping by! Where oh where has it gone? Hope yall have all been doing great and enjoying life!

Show us your Life ~ Dinner Recipes



This week I am going to be taking part in Show us your life. You can click on the banner and it will take you to the host. Kelly over at Kelly's Korner host a weekly Show us your Life! This weeks is dinner recipes!

I couldn't be more excited! I love to share recipes, and cooking is by far one of my favorite things to do! I am sharing a recipe, that I have shared before here, a long while back, but it is trully a favorite of ours! It has been an instant favorite to everyone who has tried them. Enjoy!



The best Chicken Enchiladas

4 boneless skinless chicken breasts (Flattened and grilled with fajita seasonings and black pepper), cubed
1 8oz block cream cheese, softened
2 teaspoon dried onion
1 tsp garlic powder
1 - 2 tsp fajita seasoning
1/2 tsp black pepper
1 cup of mozzarella cheese
8 - 12 flour tortillas, room temperature
2 cans of cream of chicken soup
2 cups of sour cream (16 oz container)
1 cup milk
1 can of Ro-tel tomatoes with green chilies
2 cups of shredded cheddar cheese

In a large mixing bowl, mix together well, cream cheese, dried onions, garlic powder, fajita seasoning, and pepper. Stir in the cubed chicken and mozzarella cheese.In another large mixing bowl, combine soup, sour cream, milk, and ro-tel. Mix until smooth and blended.Spray large baking dish (i use the large pyrex) with non stick cooking spray. Then spread a little of the soup mixture over the bottom. About 1/2 cup or so. Just enough to lightly cover the bottom. Roll enchiladas with chicken mixture and lay in baking dish seam down. When all are in the pan, top with soup mixture. Bake in 350 preheated oven. (uncovered) Bake for about 40 minutes. Remove and top with cheddar cheese, place back in the oven and cook for about 10 to 15 minutes. Until the Cheese is nice and bubbly!

This is the only way hubby will eat chicken enchiladas now! They are really wonderful!

Slow Cooking Thursday ~ Crock Pot White Chicken Chilli


I'm back to doing my slow Cooking Thursdays! As always, please click on the banner and it will take you to the Host's blog, Diary of a Stay at Home Mom. You will be delighted you did, as you will find more great slow cooking recipes.
Crock Pot White Chicken Chilli
1 pound navy beans, soaked
1 medium onion, chopped
3 cloves garlic, pressed
8 ounces chopped green chiles
2 teaspoons ground cumin
1 teaspoon oregano
1 1/2 teaspoons cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
2 pounds boneless skinless chicken breast halves
14 ounces chicken broth
1 cup water
Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water. Cut chicken into 1-inch pieces and brown if desired. Put all ingredients in crock-pot. Stir to mix thoroughly. Cover and cook on low 10-12 hours or high 5-6 hours.

Faithful Friday


I wanted to first remember those that we lost in the tragedy on 9/11. Yall are not forgotten! I pray for peace and comfort for all of our Nation! And please recall how United we were! Lets fight to keep it going! We are blessed to live in the greatest nation on Earth, the USA!

I'm so thankful for my family being saved that very day! God was trully at work! My cousin had taken the day off for a doctors appointment, and was not at work at the World Trade Centers. And my other cousin was alive and well in the Pentagon! God really blessed our family, and even though we are blessed by having our loved ones still with us, my heart will forever break for those who are not so lucky!

More than a faithful report this week, I come to you with some prayer requests.

My Daddy~ his health is not good, and things are not well. There isn't anything else they can do for him.

My cousin ~ They are checking her for breast cancer.

Eli ~ My friends nephew who had open heart surgery last week.

Heather and Eric ~ My sweet friends, they are dealing with infertility and not sure where the road leads next!

Remember all those children that are lost or stolen in this crazy world! And for all those children being hurt. And for everyone that is in need! God is bigger than our problems! We just have to have the faith and believe!

A Special Day!

I want to let everyone know, we will never Forget 9/11/01. It's a day that changed our lives forever! Praying for our Country. God Bless the USA!


But some 3 years later, my world changed again! It was the best gift I had ever been given! It was my precious Lil E! My sweetie is 5 today! I can't believe it! Where did time go? And she has started pre school and will start tap classes on Monday! Just totally unreal! It seems like just yesterday that I was learning of the chance of being a mom! She was a sweet 1 week old, when we found out about the possibility! And was in my arms at 1 month! But today is her special day!!!! Happy Birthday, Lil E! We love you very very much!!! You are trully a gift from God!


For fun, I thought I'd show a few of my favorite oldies! This is one of my all time favs of her when she was a baby! I just love it!


and I had to share this one, it's another fav and a favorite moment for me! I loved to feed her in her chair and read to her before bed. What sweet memories!

Lil E, may you know that not only do you have mommy and daddy's unconditional love forever, but please know that God is always with you and will never forsake you!

Pre School Time

Oh My! Is it that time already? I so can't believe my sweet baby girl has started Pre School! She started yesterday! She was so excited to be a big girl! I was so proud of her! She was really happy and ready! We have her in a private Christian Pre School, and we are believing we are going to have a wonderful year! Can't she teach them every year? That is how great she is!

We were all ready to go! She was so excited to be heading to school with her backpack!

When we arrived!




After we were there, she settled right in and joined the other kids. They started in with play dough and she was sold for good! And she was eager to paint (she learned at Open House last week, that on the first day of school, they would paint.)


As I left the school, the teacher gave me a note with a lil ziplock bag that had a few items in it. (a tea bag, a hershey kiss, kleenex, and cotton ball). The note was the sweetest that was attached. It really got me, and made me cry. It was the sweetest.
"Dear Parent,
Thank you for entrusting your child to me. I promise to do my best every day to be your child's companion in learning, to show them love and patience, and also to s how them that God loves them very much.
After you have wiped your tears, make yoruself a nice warm cup of tea. As you treat yourself to the chocolate kiss, think of all the sweet kisses that you've been treated to by your child. Then fold the cotton ball in your hand and letl the softness remind you of your child's gentle spirt.
Always know that I will work alongside you this year to help your child grow."
Now if that wasn't the sweetest, I don't know what is! It was so touching!!
While away at Pre School Mommy and Lil Sissy made some chocolate chip cookies for Lil E to enjoy when we got home from school! Oh what a treat! When I picked her up, we went by Sonic to get her the orange slush she was wanting and home to go over all the stuff in our back pack! Oh what did Lil E find waiting at home? Her favorite chocolate chip cookies! So it was a great afternoon!

Saturday Night Fun

**********I just posted this on 9/18. I started this blog and worked on it several times that day.... But never published it. ************



It's the ending of Summer and the starting of Back to School time! It's Labor Day weekend, and what have we done? We went to the Carnival last night! Everyone had a GREAT time! It was bitter sweet for this momma! Her baby girl, really isn't a baby anymore, and she wanted to ride all the big rides. (She rode everything there, except 2 of the big rides). Look at how excited she was!









Ok, this did it! I cried when she rode this! It is so bitter sweet! She is like her momma, no fear! But she is my baby girl, and I wasn't ready for her to be a big girl. But she is!
Lil K is busy playing in the water! She didn't even care about getting a duck, all she wanted to do was splash in the water!
Then my lil monkey went on the monkey! It was fitting for her, since she is trully my monkey!



All of us had lots of fun! I think the fun slide was Lil E's 2nd most favorite! The other favorite was the Huricane, and going way up high in the sky! It was really a wonderful night for us all! We had a blast with our family, some friends too! It was lots of laughs and fun time! Just the way we like to spend our time together laughing! Nothing is better than being my the ones I love most and making great memories and laughing lots!!!

Wrapping up Summer Time

We took this last weekend of Aug to spend some down time, as a family. We just chilled out together, went to the park, played outside, and even decorated for fall together. We had the best time! We laughed so hard at the girls! They were so cute! And it was so awesome to see them enjoying the best of times!




That's the loves of my life!!! I love the 3 of them more than words can say!


And isn't that just the sweetest! I can't help but love it! I'm so thankful for both of them, and when I see them being so sweet to each other, it warms my heart! It is one of the most rewarding little moments in life!
Sat Lil E and I went to some yard sales. And we sure were blessed! We found this awesome battery powered 4-wheeler, with battery and charger, for $20. So mommy got it for the girls! And they were so happy! And Lil E was really awesome, and all on her own, about helping her sister ride! She changed and let Lil K drive too! I'm so proud that she is becoming such a wonderful big sister!!!

Faithful Fridays

Yesterday was hubs day off and we had to run some errands. They said the storm was going to get pretty ugly (and they tend to over there). They were talking about hail and inch and half in size. But God never allowed the storm to be that way! Instead it was a few claps of thunder, lots of dark clouds, and rain! But as we walked out side to get in our home and head home, we were blessed by this beautiful rainbow! It was beyond gorgeous and you could see every color! WE could see the full rainbow... This changed fast, as it continued to grow, and followed us almost home with the storm! It was remarkable! And the best part was, we didn't see the double rainbow in the first picture. But after giving thanks to our Lord, for this beautiful site, we were then again blessed with a double rainbow, that was large and even more beautiful! We really had the best drive ever!








God is always with us, it's if we choice to realize it or not. This week, we had take Lil E for pre school orientation. I was really nervous, as I'm sure we will homeschool instead of public school. But I did want to let her go to this awesome Private Christian Preschool. Hubby was even more nervous than me. And after prayer, I knew that only thing we could do is all go together, so when it worked to be his day off yesterday, I knew it was trully a God sent! So we went, and I can't even tell you enough awesome things about it! It is the sweetest place! And she truly loves kids! She is remarkable! And even inspiring! So I am now really looking forward to her going there.
On this faithful Friday, I'm going to ask for prayers from all of my friends here. I have a couple of close friends who are dealing with infertility issues, and this is a very hard struggle. So I ask that you take a moment and pray for all that are struggling because of infertility. That if is God's wish for them to adopt, that God will show them the path, and open the doors that they need opened, and if it is to be a parent any other route, please pray for God to open the doors in that way too.

Slow Cooking Thursday ~ Bacon Ranch Crockpot Chicken

Bacon Ranch Crockpot Chicken

4 - 6 slices of cooked bacon, crumbled
1 -2 cloves of garlic, pressed
1 package of Hidden Valley Ranch salad dressing mix
1 can of cream of chicken soup
1 cup sour cream
4 boneless skinless chicken breast
salt and pepper to taste
1/2 - 1 cup grated cheddar cheese


Place chicken in the crock pot, and sprinkle with salt and pepper. Mix the soup, sour cream, and ranch dressing mix together. Stir in the garlic and bacon. Pour over chicken. Cook 4 - 6 hours on high or until chicken is cooked through. At the last 15 to 20 minutes before serving, top with grated cheddar cheese.
