Cooking Thursday ~ Snacker Recipes

Since most of will be making lots of finger foods and such for Super Bowl, I thought I'd share a few appetizer recipes we love!

Spicy Crackers –

1 box saltine crackers
1 1/3 cup CANOLA oil no substitution
2 TBLS. crushed red pepper
1 pkg. ranch dressing mix, original, buttermilk

Place crackers in large plastic bowl with a lid. Mix remaining ingredients well and pour over crackers. Shake the bowl ever so often. Repeat for 48 hours. Store in large plastic container. These are great alone or serve with your favorite dip.

Cheese Ball

(1) pkg of cream cheese
(1 - 2 ) pks of Buddies Ham Lunchmeat (very thin)
Chopped Green Onions

Chop lunchmeat and onions and mix well with Cream Cheese and roll in pecans.
Serve with crackers of choice for dipping! (Ritz and wheat thins are our favs!)

and for something sweet......
Chocolate Chip Cheese Ball

1 (8 oz.) pkg. of cream cheese
1/2 cup butter
1/4 tsp vanilla
3/4 cup confectioners sugar
2 tbs. brown sugar
3/4 cup mini chocolate chips
3/4 cup chopped pecans
graham crackers

Beat cream cheese, butter and vanilla until fluffy. Add confectioners and brown sugar, beat just until combined. Stir in chocolate chips. REFRIGERATE 2 hours. Shape into ball. CHILL for another hour. Roll in pecans. Serve with graham crackers (and forall of you who need more chocolate, use chocolate graham crackers!!)
