Cooking Thursday – Momma’s Lemon Pie

I am going to share a special pie with y’all. It was one my momma always made, and the pie hubby requested for Christmas dinner this year. I had to go on the hunt to find the recipe. I use to just pick up the phone and call Momma, but she she went home to be with the Lord 2 years ago, I haven’t even made it. Then again I haven’t made to much that reminded me of her, or used many of her recipes.

 

Momma’s Lemon Meringue Pie

1 can of sweetened condensed milk

2 lemons juiced and zested

3 egg yolks

4 TBS sugar

1 teaspoon of vanilla

1 pie shell (your choice of standard pie shell or make your own)

 

Meringue

4- 5 egg whites

8 – 10 TBS of sugar

 

Pre-heat oven to 350. Mix the sweetened milk, lemons, egg yolks, sugar, and vanilla together. Pour into pie crust. Bake at 350 for 25 minutes. At about 20 minutes, beat meringue. Top pie with meringue and bake for 7 to 10 minutes, until it’s golden browned.

 

 

Optional Pie Crust that I used this time

1 1/2 cup of vanilla wafer crumbs

1/4 – 1/2 cup finely chopped pecans

1/2 stick of butter melted

 

Mixed crust ingredients together and pressed in pie pan. Poured in the lemon filling and baked according to directions.

 

If you don’t like meringue you can leave it off or top it with extra vanilla wafer crumbs.

Oh YUM. My husband LOVES lemon pie so I'll have to try this one for sure :)
