Carrot Cake
2 TBSP baking soda
2 tsp. vanilla
2 cups flour
2 cups sugar
1 cup nuts
2 cups raw grated carrots
1 small can crushed pineapple
raisins (optional)
1-1/2 cup oil
2 tsp. cinnamon
1 tsp. salt
3 eggs
1 pkg. coconut (7 oz.)
Mix all ingredients together and pour into a greased 9x13 inch pan. Bake at 350 for 50 to 60 minutes. Watch it, so it doesn't burn.
Cream Cheese Frosting
8 oz, cream cheese, softened
1/2 cup butter, softened
2 cups powdered sugar
1 tsp. vanilla
Mix until creamy and smooth; spread on cake.
Refrigerate cake.
